Evaluation of oxidative stability of new cold-pressed sunflower oils during accelerated thermal stability tests

چکیده
Refined sunflower oil has dissimilar shelf life compared to cold-pressed oil, which increases the use of refined and it is more abundant in diet. On other hand, production oils does not require chemical processing. Moreover, these contain significant amounts bioactive components with a beneficial health effect. Breeders are trying create new hybrids for improved oxidative characteristics. This study aims examine rancidity 24 under accelerated thermal stability test conditions (Rancimat Schaal oven tests) compare obtained results oil. According investigated parameters, most similar was H20 sample induction period determined by Rancimat 9.55 ± 0.00 h, 9.49 The total oxidation value amounted 3.26 0.12, while this 2.12 1.73.
